FEATURES
🏰【A powerful and expressive solera Champagne, a tapestry of time in a bottle, crafted using a method similar to highly sought-after prestige cuvées like Selosse's Substance and Henriot's Cuvée 38.】 This unique Champagne employs a perpetual blending process (solera) since 2005, refreshing older reserve wines with 25% younger wines each year, combining aromatic complexity with youthful finesse. It's a blend of 33% Pinot Meunier, 33% Pinot Noir, and 34% Chardonnay, with base wines aged in small oak barrels. It presents a luminous, medium-deep golden color with pinpoint bubbles. The nose offers a haunting compilation of baked and fresh apples and pears, toasted almonds, brioche, curry powder, dried exotic flowers, and hints of mushroom and earth, with surprising fineness for a solera. The palate is full and weighty, with a taut line of fresh acidity, flavors of dried and fresh fruits, exotic spices, walnuts, and toasted pastries, leading to an extremely long finish with waves of salinity, spice box, and savory fruit.
🍴 Excellent with lobster, Bresse poularde with morels, hard cheeses, shellfish, fish, white meat, pork, and rich fish like salmon or tuna.
🥂 Perfect for an aperitif, but truly shines as a gastronomic Champagne, ideal for special celebrations or a luxurious dinner.
