🏰【An impressive 1er Cru Volnay from a top producer, showcasing remarkable intensity and elegance even in a challenging vintage】, the 2007 Henri Boillot Volnay Caillerets 1er Cru stands out. Les Caillerets is historically recognized as one of Volnay's finest 1er Crus. Despite 2007 being a complicated vintage with variable weather, Henri Boillot, a fifth-generation vigneron, managed to produce "extremely impressive" wines, with this Caillerets bottling earning a "Sweet Spot Outstanding Selection" designation. Expect a bright ruby red hue. The nose offers compelling aromas of blackberry, dark chocolate, violet, minerals, and game, with hints of superripe fruits, red berries, strawberries, and cherries. The palate is concentrated and rich, with a suave texture, underlying minerality, and persistent yet silky tannins, leading to a long, elegant finish with a touch of wood and slight sweetness.
🍴 This elegant Pinot Noir is a superb match for classic Burgundian dishes like Saute de Boeuf a la Bourguignonne. It also pairs beautifully with roasted veal, game birds, or richer fowl.
🥂 This wine is drinking wonderfully now and can continue to evolve for at least another five years. It's ideal for a sophisticated dinner, a special gathering, or for those who appreciate the nuanced beauty of a mature, well-crafted Burgundy.
BACKGROUND
Domaine Henri Boillot is a wine producer based in Meursault, France, is renowned for its red and white wines from Côtes de Beaune appellations. Chardonnay and Pinot Noir are the primary grape varieties featured. The estate was named Domaine Jean Boillot until 2005, but was changed when Henri Boillot bought out his siblings in order to distinguish it from his brother's new Domaine Jean-Marc Boillot. Henri had previously set up Maison Henri Boillot for négociant wines and retains these labels to distinguish them from estate wines.
