🏰The 2007 vintage in Burgundy, despite climatic challenges, sculpted wines of character and longevity. Domaine Ponsot's Griotte-Chambertin Grand Cru 2007 is a 【mature yet marvelously spirited creation】 that encapsulates the storytelling prowess of nature through Burgundy's diverse climates. It offers a striking nose of dark plum and fresh berries, bacon fat, and black tea, with a direct counterpart on a polished, expansive, sappy palate. The wine leads to an arrestingly gripping yet uncannily buoyant finish, with persistent smokiness, berry tartness, animal savor, palpable underlying chalkiness, and saliva-inducing salinity, making for compelling complexity. Jancis Robinson rated it 18/20 points, noting its very deep, bright crimson color, very deep-flavored and 'masculine' character, bright fruit, sharp acidity at an early stage, and marked tannins, suggesting it would be one of the longer-lived 2007s.
🍴 This complex Grand Cru Burgundy pairs exquisitely with roasted game birds, truffle dishes, or a rich mushroom ragu. Its savory and earthy notes also complement aged cheeses like Epoisses or Comté.
🥂 An exceptional wine for a connoisseur's tasting, a special anniversary, or a luxurious gift. It is drinking beautifully now, showcasing the elegance and complexity that only time can bring to a fine Burgundy.
