They employ traditional Burgundian winemaking methods, including primary fermentation in barrel, secondary (malolactic) fermentation to soften and add texture, and stirring of yeast (battonage) to enhance silkiness. The wines are bottled unfined and unfiltered. The Estate Chardonnay is made from old Wente clone vines. The 2021 vintage shows real refinement and complexity. This wine offers intense aromas of yellow apple, pastry, dried hay, and almonds. The light-bodied palate begins with shimmery acidity and rocky tones, evolving into creamier, biscuity notes, with a powerful, expansive finish.
