🏰 The 2007 vintage in the Northern Rhône produced wines with good balance and freshness. Chapoutier's Ermitage L'Ermite Blanc 2007 is a testament to the region's ability to craft long-lived white wines. This wine, sourced from the very poor and granitic soils at the top of the Hermitage hill, around the chapel, is known for its profound complexity and remarkable aging potential. It displays a brilliant and limpid straw yellow color. The nose is complex, offering aromas of vanilla, almonds, dried fruits, and linden-tree, with a marked minerality that is typical of its unique terroir. On the palate, it is a very round and rich wine, showcasing an elegant balance with a light bitterness on the finish. Expect very ripe white fruit aromas, such as peach and apricot, leading to a beautiful length and immense complexity. 【Exceptional aging potential, up to 75 years in great vintages】.
🍴 This powerful and complex white Hermitage is a fantastic match for rich and flavorful dishes. Consider grilled or roasted white meats, especially poultry in creamy sauces. It also pairs beautifully with rich fish like salmon or tuna, shellfish, and many Asian-inspired dishes. Don't hesitate to serve it with mature and hard cheeses, or even goat's cheese and blue cheese, as its intensity can stand up to them. Spicy dishes and curries are also surprisingly good companions.
🥂 This wine is perfect for a grand celebratory dinner, a special anniversary, or a serious tasting session where its evolution can be appreciated. Its long aging potential makes it an excellent cellar candidate and a thoughtful gift for a discerning collector. For a wine of this age, careful handling is key. It's advisable to decant it gently for an hour or two before serving to allow its complex aromas to fully unfold and to separate any natural sediment. Serve at a cool cellar temperature, around 12-14°C (54-57°F).
