🏰 【Chateau Gilette Crème de Tête is a legendary and idiosyncratic Sauternes, uniquely aged for decades in concrete tanks without oak, resulting in a wine of extraordinary freshness, complexity, and immense longevity, with the 1967 vintage earning a stellar 96 points from Robert Parker.】 This remarkably preserved sweet wine, now over 50 years old, boasts the finest bouquet of tangerine, beeswax, pine needles, and cumin, which opens wonderfully with aeration. The palate is beautifully balanced, offering notes of allspice, dried orange peel, marmalade, and white pepper, leading to a harmonious and elegant finish reminiscent of a Tokaji Aszu. It's full-bodied, dense, and intense, yet retains a surprising freshness and power.
🍴 This exceptional Sauternes pairs exquisitely with blue cheeses, foie gras, or roasted chicken. Its unique character also makes it an intriguing match for spicy Asian cuisine or even a delicate fruit tart.
🥂 Given its venerable age, the condition of the cork and capsule is paramount. This wine demands careful handling. Serve it lightly chilled, around 10-12°C (50-54°F). While it benefits from aeration, decanting should be done cautiously and for a short period (15-30 minutes) to avoid over-oxidation, or simply allow it to open slowly in the glass.
