FEATURES
🏰 Bonnet-Ponson's "1er Cru Le Jour" is an exceptional Blanc de Noirs Brut Nature Champagne, a testament to the family estate's organic practices since 1862. This unique cuvée is crafted from 100% Pinot Meunier grapes, specifically from the "Le Jour" plot in Vrigny, where vines planted in 1971 thrive on clay-limestone soils. The wine undergoes vinification in oak barrels without added sulfites and ages for 24 months on lees, contributing to its remarkable depth. Cyril Bonnet's commitment to no dosage (0 g/l) and minimal intervention results in a pure and intense expression of its origin. Production is highly limited, with only 1,500–2,000 bottles made.
This Champagne displays a pale gold color with fine, elegant bubbles. The nose is distinctive, dominated by hazelnut, nougat, and nut butter, complemented by roasted notes, light cigar tobacco, grapefruit, wet stone, and a hint of linoleum. Aromas of yellow fruits like mirabelle plum and ripe apple intertwine with spicy and floral notes. On the palate, it offers a lively texture, mineral freshness, and a slightly saline finish reminiscent of chalk and citrus. The attack is robust and unmistakable: salty, creamy, with crushed nut butter, crème pâtissière, milk chocolate, and café au lait, with dried red apple, mace, and red pepper adding depth. The finish is long, salty-mineral, with lingering nut and spice dignity. Despite the zero dosage, the Pinot Meunier provides a fine sweetness of ripe fruit with very subtle acidity, leading to a fruity, tangy, full, and delicious mineral flavor. 【A rare, organic, 100% Pinot Meunier Blanc de Noirs Brut Nature Champagne from a single vineyard, showcasing purity and intensity】.
