FEATURES
🏰 Château Climens' Asphodèle 2019 is the dry white wine from this renowned 1er Cru Classé Sauternes estate, crafted in collaboration with Sancerre's Pascal Jolivet. The 2019 marks only the second vintage of this wine, made from 100% Semillon and fermented and aged entirely in stainless steel to preserve its freshness. It aims to deliver a uniquely fragrant and uncontrived style of dry white from the Sauternes region.
This dry white Bordeaux presents a pale yellow to light silvery gold color. It offers a powerful nose with notes of papaya, subtle tangerine, chalk, and a pleasant minerality. Robert Parker noted a soft-spoken restraint, revealing lemon peel, fresh hay, Bosc pears, paraffin wax, coriander seed, honeysuckle, and toasted almonds. On the palate, it is medium to full-bodied with an oily texture, good acidity, and flavors of tangerine and lime, especially on the long finish. It boasts a lively line of freshness and a satiny texture, culminating in a long and perfumed finish. 【Rare dry white Semillon from a prestigious Sauternes Grand Cru estate, made in collaboration with a Sancerre master】.
🍴 Asphodèle pairs wonderfully with seafood, particularly shellfish, lobster, crab, and oysters. It also complements roasted chicken, veal, and pork dishes, especially those with a spicy or slightly sweet preparation. Spicy Asian cuisine, raw fish like sushi or sashimi, and a variety of cheeses are also excellent pairings.
🥂 This wine is a delicious treat even when young, suitable for immediate enjoyment upon release. It would grace any elegant dinner table and is an excellent choice for those seeking a distinctive and high-quality dry white wine.
