🏰The 2019 Francois Raveneau Chablis Les Clos Grand Cru is a 【serious and tensile Chablis, widely considered a candidate for Chablis of the vintage, showcasing uncommon poise and pixelation】. This Grand Cru unwinds with aromas of orange oil, white flowers, confit lemon, green apple, and deftly judged reduction. Full-bodied, taut, and chiseled, it's an immensely concentrated, racy wine with huge depth at the core and a long, intensely saline finish. The 2019 vintage in Chablis was excellent, producing wines with great depth and aromatic intensity. This wine possesses a well-deserved reputation for exceptional longevity, with some experts advising not to open a bottle for at least 10 years.
🍴 This powerful and mineral-driven Chablis is a superb match for premium seafood. Think grilled lobster, pan-seared scallops, oysters with a squeeze of lemon, or rich fish dishes like turbot or sole meunière. Its salinity and acidity will cut through the richness and complement the delicate flavors of the sea. It would also pair well with poultry in a creamy sauce or goat cheese.
🥂 This is a wine for a significant celebration, a serious white wine tasting, or a special dinner where its complexity can be fully appreciated. Its age-worthiness also makes it an excellent addition to a cellar for future enjoyment. It's a wine that demands attention and rewards patience.
