FEATURES
🏰 From André Beaufort, 【pioneers of agrobiology and biodynamic farming since the 1970s】, producing pure, unadulterated, and highly singular Champagnes. The 1996 Polisy Brut is fully mature and ready to drink, offering a generous, full-bodied Champagne. It boasts a delicious nose with complex aromas of lychee, stone fruit, candied pear, and citrus, combined with herbal and pastry notes. On the palate, it is concentrated, unctuous, and very elegant, with notes of yellow fruit, citrus, caramel, and a chalky, iodized texture. This Champagne has a velvety texture, balanced acidity, and a long, persistent, chalky finish, presenting a creamy and fresh, opulent yet refined character with lovely persistence and great minerality. It's a blend of 80% Pinot Noir and 20% Chardonnay.
🍴 This mature Champagne is an excellent pairing for shellfish, crab, and lobster. It also complements starters, various fish dishes, pasta, and a selection of cheeses.
🥂 Fully mature and ready to drink, this Champagne is perfect for immediate enjoyment at a celebratory event or as a sophisticated aperitif. While one review suggested it did not integrate well over the years, the overwhelming consensus points to a generous and complex wine at its peak.
Serving an older vintage Champagne like this 1996 requires careful handling. Serve chilled, ideally between 10-12°C. Be mindful of the cork, as older corks can be fragile; a proper Champagne saber or a two-pronged opener might be beneficial for a smooth opening.
