🏰 The 2023 vintage marks the inaugural release from Maison Ex Nihilo, a confidential estate in Auxey-Duresses founded by Morgane and Alban Desazars. Despite a tumultuous spring, the 2023 布根地 (Burgundy) vintage is anticipated to be brilliant, with high expectations for quality. Ex Nihilo focuses on a non-interventionist winemaking approach, aiming for precise and pure wines with a pronounced minerality. Production is extremely limited, with only 1,113 bottles of 'Les Monsnières' produced. This Chardonnay is sourced from high-altitude vineyards at 350m, planted on rocky clay-limestone soils of the Montagne de Beaune, and aged for 12 months in a combination of barrels and vats.
This wine offers a delicate nose with aromas of peach and pear, enriched with subtle buttery and herbaceous nuances. On the palate, it is full-bodied, showcasing fruity aromas of great purity and finesse, with a subtle complexity that maintains its elegance. Reviewers note it as very lean and elegant, with white peach, flowers, and abundant minerality, yet restrained fruit and minimal oak influence. 【 This inaugural 2023 vintage from a new, confidential estate boasts tiny production and a focus on purity and minerality. 】
🍴 This elegant and mineral-driven white wine is an excellent pairing for shellfish, pasta, rich fish like salmon or tuna, mild and soft cheeses, cured meats, grilled white fish, chicken in cream sauce, or goat cheese salads.
