Vincent Dauvissat, Chablis Les Preuses Grand Cru, 2009
🏰This Vincent Dauvissat Chablis Les Preuses Grand Cru 2009 is a prized bottling from one of Chablis' most prestigious producers, offering a rich fabric of finely spun fruit and remarkable finesse. Despite being from a warmer vintage, it maintains impeccable balance and a mineral-driven profile. Expect a complex nose with lemon peel, honey, mint, and white flower, alongside green fruit, apples, quince, and a hint of herbs. The palate reveals intense minerality, bracing acidity, and flavors of sea shells and salinity, culminating in a long finish. Hints of aged honey, black tea, and white flowers also emerge.
🍴 This elegant white Burgundy pairs beautifully with pork, shellfish, rich fish like salmon or tuna, and mild, soft cheeses.
🥂 Perfect for a sophisticated seafood dinner or a special gathering, this gorgeous Grand Cru Chablis is delicious now but will truly sing with a few more years of age. If drinking young, decanting for a few hours is recommended to allow its complex aromas to fully unfold.
BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
