🏰The 1987 Moillard Romanée Saint Vivant Grand Cru is a 【rare and historic Burgundy Grand Cru, offering a unique opportunity to experience a mature Pinot Noir from a challenging yet potentially rewarding vintage】. Romanée Saint Vivant is one of Burgundy's most prestigious vineyards, known for producing elegant and complex wines. The 1987 vintage in Burgundy was generally considered difficult due to adverse weather, but top producers like Moillard, especially from Grand Cru sites, could still craft wines with surprising longevity and charm. Expect a wine with profound tertiary development, showcasing delicate notes of dried roses, forest floor, truffle, and subtle spice, with a silky texture that only age can bring. The condition of such an old wine can vary, but a well-preserved bottle would be a true treasure.
🍴 This exceptionally mature Grand Cru demands thoughtful food pairings. Opt for delicate, earthy dishes that won't overpower its nuanced flavors. Pan-seared duck breast with cherry reduction, mushroom and truffle preparations, or a simple roasted guinea fowl would be exquisite. For cheese, consider mild, aged goat cheese or a delicate, creamy Brie.
🥂 This wine is an extraordinary choice for a milestone celebration, a very intimate and reflective tasting, or a gathering of serious Burgundy collectors. It's a wine that tells a story of its vintage and terroir through decades of evolution. For wines of this venerable age, extreme care is needed. Stand the bottle upright for several days to allow all sediment to settle. Decant very gently and slowly, watching carefully for sediment. Be prepared for a fragile cork and capsule; a Durand opener or similar tool might be beneficial. Serve slightly below room temperature, around 15-17°C (59-63°F), to best appreciate its delicate aromas and flavors.
