🏰 The 2016 Du Pelican Vin Jaune marks a significant milestone as it is the domaine's first vintage of this unique Jura specialty. Made from the Savagnin grape and aged for 6 years and 90 days under a veil of yeast without topping up, this wine develops a distinctive oxidative character, earning it the nickname "the Gold of the Jura." It's an 【intensely yeasty, textured, and salty wine with notes of candied orange, offering an acquired taste reminiscent of fino sherry】.
🍴 This distinctive Vin Jaune is traditionally paired with Comté cheese, a classic regional match. It also excels with other hard cheeses like Beaufort and Emmental, snails, fresh walnuts, dried fruits, and foie gras. For a more adventurous pairing, consider cured meats like pata negra, creamy mushroom dishes, or even spicy fish or poultry.
🥂 A unique and adventurous choice for a tasting with curious wine enthusiasts, a dedicated cheese course, or a meal featuring rich, savory, or even slightly spicy dishes. Its singular character makes it a fascinating conversation piece.
Serving: Pay close attention to storage and serving temperature. Serve at around 12-14°C (54-57°F) to allow its complex oxidative aromas to shine. It is typically sold in a distinctive 62cl "Clavelin" bottle.
