🏰Domaine Derain's Les Combes au Sud Saint-Aubin 1er Cru 2014 is a mineral-driven white Burgundy crafted from Chardonnay, reflecting the producer's biodynamic philosophy and non-interventionist winemaking. The 2014 white Burgundy vintage was noted for being clean, balanced, and very good. This wine offers a delicate and aromatic nose of yellow fruits and brioche, with invitingly fresh pineapple and lemon notes, sometimes showing noble reduction. On the palate, it is ample with flavors of fresh apricot and almond, alongside stony, grippy lemon and pear with a caramel kiss, all supported by a very pleasant finish with nice tension and good crisp intensity.
🍴 This elegant Chardonnay is a versatile food companion. It pairs beautifully with shellfish, fish, charcuterie, and goat cheese. Consider it with fried food, stinky cheeses, roast white meats, or classic Burgundy Chardonnay pairings like seafood platters, scallops, and oysters.
🥂 An excellent choice for a sophisticated dinner, a seafood feast, or a cheese course. While some notes suggest it might be approaching its peak or should be enjoyed soon, well-stored bottles can still offer a rewarding experience. Serve chilled at around 10-12°C (50-54°F) to best appreciate its nuanced flavors and refreshing acidity.
