🏰Château de Fosse-Sèche, run by brothers Guillaume and Adrien Pire, is a biodynamic estate in Saumur, known for its commitment to biodiversity and natural winemaking. The Eolithe, primarily Cabernet Franc with a small percentage of Cabernet Sauvignon, is named after the flint bedrock under the vineyard. The vines are planted on a unique Jurassic-era flint plateau, where curved vineyard aspects and heat-absorbing flint stones create a warming microclimate tempered by cool breezes, favoring slow and balanced ripening. The 2016 vintage saw the brothers invest in concrete eggs for fermentation, moving away from oak barrels, and the wine ages on lees for two years.
This wine displays a rich and complex savory character. Expect perfumed notes of 【black cherries, currants, dried flowers, rose petal, and huge iron/mineral-like nuances】. On the palate, it offers fresh fruity notes, savory red pepper, and herbal qualities, with a lovely complexity accentuated by a round, textured body, and an extensive savory finish. It is fresh and lively, with a Pinot Noir-like elegance.
