🏰 Crafted by Pierre Vaïsse with guidance from Languedoc legends Laurent Vaillé and Frédéric Pourtalié, the 2013 Vaisse Aphyllante Herault is a 【characterful red from the sun-drenched hills of Languedoc】, showcasing ripe Mediterranean fruit with freshness and finesse. This Mourvèdre-dominant blend offers a generous nose of dark berries like blackberries and ripe cherries, layered with dried herbs, subtle spice, and a touch of warm earth. On the palate, it's full-flavored yet balanced, with juicy black and red fruit, fine-grained tannins, and a lively acidity that promises graceful evolution for several years.
🍴 This versatile red pairs beautifully with grilled lamb chops, roast pork, duck breast, or hearty pasta dishes. It also shines alongside Mediterranean-inspired cuisine like ratatouille or herb-roasted vegetables, and complements mature semi-hard cheeses and charcuterie.
🥂 Perfect for a rustic dinner party with friends, a cozy evening by the fireplace, or any occasion where a robust yet elegant Southern French red is desired. Serve at 16–18°C (60-64°F). A short decant of 30–45 minutes is recommended to allow its aromas to fully open.
