🏰 Lamy Caillat's Chassagne Montrachet La Romanee 1er Cru 2015 is a superb white 布根地 wine, offering a fabulous nose of fresh pear, preserved citrus, melon, and orange blossom. This wine is full-bodied, deep, and concentrated, built around a lovely line of acidity and finishing with an almost saline suggestion of minerals. It's described as pure and delicate, with ripe and fresh green apple, white flowers, beeswax, and a soft yeast note, leading to an exquisite and complex, beautifully carved profile. While voluminous and textural from the barrel, it has tightened up in the bottle and will demand several years in the cellar to unwind. Expect a chalky, saline finish wrapped in luxury oak with a restrained yellow fruit profile.
🍴 This elegant white 布根地 wine is a fantastic partner for rich fish dishes like pan-seared salmon or roasted cod. It also complements poultry in cream sauces, such as chicken fricassee, or roasted vegetables with herbs. For cheese, a fresh goat cheese or a mild, creamy Brie would be an excellent choice.
🥂 Ideal for a special dinner or a serious tasting, this wine is a testament to the aging potential of fine Chassagne-Montrachet. It's a wine that will reward patience, so consider cellaring it for a few more years to allow its full complexity to emerge. Serve chilled, around 12-14°C (54-57°F), to best appreciate its intricate layers.
