FEATURES
🏰 The 1983 vintage in the Northern Rhône Valley was largely stunning, producing gorgeous, age-worthy reds and notably fresh, elegant whites. Paul Jaboulet Aîné's Hermitage Chevalier de Sterimberg, a white Hermitage, benefited greatly from these conditions. Wines from this vintage and appellation are known for combining rich fruit with a powerful tannic structure in reds, while the whites, like this one, are praised for their freshness and elegance. Expect a complex bouquet that may include notes of honey, dried apricots, white flowers, and a subtle minerality, evolving beautifully with age. 【 1983年北隆河谷的傑出白酒年份 】.
Serving Advice for an Aged Wine: This is a very old white wine and should be handled with extreme care. Stand the bottle upright for several days to allow any potential sediment to settle, though white wines typically have less. Use an Ah-So opener to gently remove the cork. Avoid aggressive decanting; a brief decant (15-30 minutes) might be beneficial if there's any cloudiness, but often, simply opening and pouring is best to preserve delicate aromas. Serve slightly chilled, around 12-14°C (54-57°F).
🍴 This aged white Hermitage would be exquisite with rich seafood dishes like pan-seared scallops or lobster thermidor. It also pairs beautifully with roasted poultry, creamy chicken dishes, or mature goat cheese.
🥂 Ideal for a special, intimate dinner to showcase the longevity and beauty of aged white Rhône, or as a unique offering at a connoisseur's tasting event.
BACKGROUND
Paul Jaboulet has been a part of the Rhône Valley wine industry for almost two centuries, beginning with a small plot of land on the hills of Hermitage, before expanding throughout the region. Today, it encompasses more than 100 hectares (250 acres) of vineyards making wines from the northern and southern Rhône, including Hermitage, Crozes-Hermitage, Châteauneuf-du-Pape, Condrieu and Cornas. The Paul Jaboulet Hermitage La Chapelle is the estate's flagship wine and is one of the most sought-after wines from the Rhône, reaching high prices at auction. It is named for a 13th Century church built atop Hermitage, which became the property of the Maison in 1919. This is made of 100 percent Syrah and the grapes come from the best terroirs the Maison has access to, including famed vineyards Les Bessards, Le Meal and Les Rocoules. There is also a white La Chapelle made from a blend of Marsanne and Roussanne, exclusively from the Les Rocoules estate.
