🏰 The 1980 Dom Pérignon is a testament to the enduring quality of this iconic Champagne, showcasing a beautiful golden straw colour upon release. On the nose, it offers lovely aromas of toasted brioche, baked autumn fruits, and preserved lemon, with a subtle hint of menthol that develops into more sustained notes of autumn fruits. The palate is described as pure and precise, with a delicate yet vibrant acidity that keeps it fresh, leading to a long finish with citrus and ginger notes. While some recent tastings note oxidative characteristics, nutty, and butterscotch flavours, suggesting it might be past its prime for some, others find it still going strong with fair mousse and enough carbonation to remain lively. 【 A mature and complex Champagne, still offering vibrancy and a unique aged character. 】
🥂 This vintage, now over four decades old, is perfect for a truly special occasion, perhaps a milestone anniversary or a significant celebration where its historical significance and evolved character can be appreciated. It's a wine for contemplation and savouring. Given its age, expect some bottle variation. The cork may be fragile, so use a proper Durand or an Ah-So opener. Decanting is generally not recommended for old Champagne as it can dissipate the remaining effervescence too quickly; instead, pour gently into tulip-shaped flutes or white wine glasses to best appreciate its delicate bubbles and complex aromas. Serve well-chilled, around 8-10°C (46-50°F).
🍴 For food pairings, consider dishes that complement its evolved, nutty, and brioche notes. Think of delicate seafood dishes like pan-seared scallops or lobster thermidor. It also pairs beautifully with aged hard cheeses, or even a rich, creamy mushroom risotto. Some have found it paired greatly with paella. For a more adventurous pairing, consider roasted chicken with herbs or even a light truffle pasta.
BACKGROUND
Dom Perignon is the prestige cuvee of Moet & Chandon, named after the Benedictine monk who was an important quality pioneer for Champagne wine. Produced only in exceptional vintage years, it is a blend of Pinot Noir and Chardonnay, celebrated for its perfect balance, complexity, and aging potential.
