🏰【A vibrant and mineral-driven Chablis 1er Cru from the esteemed William Fevre, showcasing the purity and tension of a young, promising vintage.】 The 2023 Chablis Vaulorent 1er Cru has a "mineral-driven bouquet" with "oyster shells and a touch of petrichor, quite intense." The palate is "well balanced with a pleasant 'bite' on the entry." It has a "twist of sour lemon" imparting tension and fine weight on the finish, suggesting it should age well. The Vaulorent from Fevre is more mineral than its Montée de Tonnerre, with aromas of lime peel, mirabelle plum, and passion fruit. The texture is "chiselled and concentrated, with layers of tightly wound extract and a dense, chalky finish." Winemaker Didier Seguier chooses his favorite blocks for this bottling. The wine's bouquet is bright and complex, with lime, pear, green apple, chalky minerality, a touch of anise, and citrus blossoms. It's full-bodied, pure, with superb depth of fruit, great mineral drive and cut, snappy acids, and outstanding length and grip. It offers a powerful nose combining citrus and white-fleshed fruit with a typical mineral note. The rich and concentrated palate has remarkable freshness and length. Notes of green apples, citrus, and subtle mineral notes are also present. Some describe it with smoky, flinty stones with crisper acidity, lots of brightness with a saline, pithy finish.
🍴 This crisp Chablis is excellent with fresh oysters, grilled fish, seafood platters, or goat cheese salads.
