🏰 The 2018 François Cotat Sancerre Les Monts Damnés comes from a warm growing season, resulting in a Sancerre that defies typical expectations. Made with very late-picked, super-ripe grapes, it offers masses of density and concentration. This wine is known for being the most chiseled and profound of Cotat's bottlings, sourced from a steep slope with virtually no topsoil in the unique Chavignol area, which boasts more clay and limestone in its chalky soils. The nose is opulent with tropical and honeyed notes, white flowers, orchard fruit, and some flint, suggesting a dense and chewy character. On the palate, it's taut and mineral, with citrus and grapefruit pith, beautifully balanced by a natural residual sweetness and saline characters on the finish. 【 來自獨特Chavignol土壤陡坡的精緻深邃Sancerre 】
🍴 This rich and concentrated Sancerre would be an excellent partner for pan-seared scallops, roasted chicken with herbs, or a creamy goat cheese tart. Its minerality and acidity would also cut through richer fish dishes.
🥂 This Sancerre has a very long future ahead and is still quite young. It's recommended to cellar it for at least 5-8 more years, as it is expected to truly blossom with 10-15 years of aging, developing waxiness and lanolin notes. Serve at 10-12°C.
