🏰From the promising 2023 Burgundy vintage, Pierre Boisson's Pommard is an opulent and concentrated Pinot Noir, showcasing ripe black cherry fruit, earthy notes, and a structured palate with excellent aging potential. The 2023 vintage in Burgundy is characterized by concentration and freshness, yielding ripe, fresh, and well-balanced wines. Pommard, in particular, produced beautiful wines in this hot vintage, with good quality tannins. These are opulent, black-cherry-ripe Pommards, rich in ripe tannin and alcohol, yet retaining freshness, and are structured to age very well, needing more time in bottle than most from this vintage. Pierre Boisson's wines are fermented with native yeasts and aged in neutral oak with minimal intervention. The wine offers notes of red plum, strawberry, red cherry, cedar, cloves, earthy, and forest floor. The palate is dry, with high acidity, medium alcohol, full body, and medium-plus flavor intensity, leading to a smooth finish. It has excellent full body and pronounced flavor, with potential for further aging.
🍴 Goes great with veal. Also pairs well with duck, goose, and game birds. Roasted red meats or mushroom dishes would also be excellent.
🥂 A wine with great aging potential, suitable for cellaring, or for a special dinner where a youthful yet structured Burgundy is desired.
