Philippe Pacalet, Gevrey Chambertin Les Corbeaux 1er Cru, 2021
🏰The 2021 Philippe Pacalet Gevrey-Chambertin Les Corbeaux 1er Cru emerges from a Burgundy vintage that, despite being highly challenging with severe frosts and low yields, is celebrated for producing [【a return to a more classic, refined style of red Burgundy with freshness and moderate alcohol】]. Pacalet's natural winemaking approach is likely to have captured the purity and softly-spoken intensity of this unique vintage, offering a terroir-expressive Pinot Noir with bright acidity and fine tannins.
🍴This elegant red Burgundy is an excellent match for roasted game birds, pan-seared duck breast, or delicate lamb preparations. It also pairs beautifully with earthy mushroom dishes or fine charcuterie.
🥂A compelling choice for Burgundy purists seeking a classic expression, a special dinner, or a thoughtful addition to a discerning cellar.
BACKGROUND
Philippe Pacalet is a prominent figure in the natural wine movement in Burgundy. After working at Domaine Prieuré Roch, he started his own micro-négoce business in 2001. Pacalet is known for his strict adherence to natural winemaking: organic farming, whole-cluster fermentation with indigenous yeasts, and minimal sulfur use. 'Les Corbeaux' is a Premier Cru vineyard in Gevrey-Chambertin, situated right next to the Grand Cru Mazis-Chambertin. Pacalet's interpretation of Les Corbeaux is highly aromatic and elegant, featuring notes of wild berries, floral perfume, and a distinct earthy minerality, with a silky texture and refined tannins.
