They are dedicated to biodynamic farming, prioritizing biodiversity, and their wines are recognized for focused minerality and typicity. The 2010 "Les Tris de la Chapelle" is a Chenin Blanc made from fully botrytized grapes, with fermentation naturally halting at a medium-sweet level (around 20 g/l residual sugar). It's described as an "OVNI" (UFO) due to its surprising concentration and unique style. It presents a burnished golden yellow color. The nose is unctuous, sweet, and somewhat oxidative, with intense aromas of honey, smoke, dried bitter orange zest, roasted nuts, slivered almonds, and beeswax.
