This mature Chambertin Grand Cru demands equally refined pairings. Consider roasted venison, wild boar ragu, or a classic coq au vin. It also excels with truffle-infused dishes, aged hard cheeses like Comte, or a rich mushroom pithivier.
🥂 fit for event suggestion IN ENGLISH
An extraordinary wine for a milestone celebration, a serious Burgundy tasting, or a contemplative evening with fellow connoisseurs. Its rarity and maturity make it a truly special experience.
Serving: This is a fully mature wine. Serve at 16-18°C (60-64°F). Gentle decanting for 30-60 minutes is recommended to allow the wine to breathe and to separate any fine sediment, but be mindful not to over-aerate very old wines. Ensure the cork is in good condition before opening.
BACKGROUND
Domaine Henri Rebourseau is a well-regarded wine producer based in the village of Gevrey-Chambertin in the northern Côte de Nuits subregion of Burgundy's Côte d'Or heartland. The domaine produces principally red wines from the Pinot Noir variety. The estate began in the mid-19th century when Jean-Baptiste Rebourseau and his wife Louise-Victoire Philippon consolidated vineyard holdings. It was passed to his sons Émile and Henri, and in 1949 to Henri's son Pierre Rebourseau. In 1980, Pierre's grandson Jean de Surrel took over, shifting to organic and biodynamic viticulture. In 2018, Olivier and Martin Bouygues acquired a controlling share. Bénigne and Louis now manage the estate with Hervé Berland.
