Ponsot, Clos De La Roche Vieilles Vignes Grand Cru, 2000
🏰 【A testament to Burgundian mastery, the 2000 Ponsot Clos de la Roche Vieilles Vignes Grand Cru is a singular, gracefully aged wine from old vines, offering a complex tapestry of vibrant red fruits, seasoned oak, and earthy undertones.】 This red 布根地 Grand Cru presents an open and expressive bouquet with red berry fruit and sous-bois notes, hints of orange and truffles. On the palate, expect mature red fruit, quite rich and transparent for the vintage, with undertones of earth and licorice adding complexity. The tannins have softened beautifully without losing their defining structure. It offers wonderfully complex, rather supple flavors, bigger and richer than some, with a long, firm finish.
🍴 This mature red Burgundy is an excellent partner for roasted game, especially duck, goose, and other game birds. It also pairs beautifully with truffle dishes, rich mushroom-based cuisine, or a selection of aged hard cheeses.
🥂 A magnificent wine for a milestone celebration, a serious tasting among connoisseurs, or a contemplative evening. This 2000 vintage is fully mature and drinking beautifully now. Expect a delicate bouquet with evolved tertiary aromas. The cork and capsule might be fragile, so open with care. Decanting for a short period (30-60 minutes) can help it open up, but be mindful of its age and potential fragility. Serve at cellar temperature, around 16-18°C (60-64°F).
