🏰【A pure and precise Extra Brut Champagne, showcasing the unique terroir of Val Champignat with vibrant fruit and mineral depth】. Etienne Sandrin is a relatively newcomer in Southern Champagne, known for his detailed work ethic and laser-like precision. The Val Champignat vineyard is a westerly plot planted with old massale selection Pinot Noir, benefiting from late afternoon sun and deep Kimmeridgian limestone. The estate converted to organic in 2014 and biodynamic in 2015, aiming for terroir expression without oak patina. The 2019 vintage in Champagne saw heat peaks causing vines to close down, temporarily halting ripening, making it difficult to select the optimum harvest time. This 100% Pinot Noir, farmed biodynamically without dosage, was disgorged in February 2023. Aromas include saline, sea breeze, white pepper, juicy mint, cranberry, apricot, fresh apple (red apple skin), mandarin orange, and floral tones. The palate is pillowy with a little grip on the finish, showing spice (white pepper), sour apple, and a great density and depth. It fills out nicely with air, taking on polish and a citrusy tone, with a wet stone thingy at the finish. It's described as so fresh and elegantly fruity that it looks like a cup of strawberries with cream.
