🏰 Tollot-Beaut Corton Grand Cru 1992 is a 【rare, mature expression from a highly respected domaine, offering a glimpse into the evolution of a powerful Grand Cru Burgundy Pinot Noir from a challenging yet rewarding vintage】. The 1992 Burgundy vintage was generally difficult, but skilled producers like Tollot-Beaut could still craft decent wines. This Corton Grand Cru is known for its intensity, concentration, structure, and length. While specific 1992 tasting notes are scarce, expect evolved notes of dried fruit, forest floor, leather, tobacco, and earthy undertones, with softened tannins and a complex, lingering finish, reflecting its 30+ years of age.
🍴 This aged Grand Cru pairs wonderfully with venison, ribeye, mushroom dishes, and aged cheeses. It's also a classic partner to roasted game birds, grilled duck breast, and dishes rich in umami or black truffles.
🥂 This is a magnificent wine for a milestone celebration or a contemplative tasting session, showcasing the beauty of aged Burgundy. Be aware that older wines may have fragile corks and capsules. Serve at 16-18°C (60-64°F) and consider a gentle decant for 30-60 minutes to allow any sediment to settle and the wine to breathe, but be cautious with very old wines as excessive aeration can diminish delicate aromas.
BACKGROUND
Domaine Tollot-Beaut is a historic family estate based in Chorey-lès-Beaune, known for being one of the first in Burgundy to bottle their own wines in the 1920s. They produce wines with a generous, fruit-forward style and noticeable oak influence. Their Corton Grand Cru is a blend from several parcels on the Corton hill. It is a robust, full-bodied Pinot Noir with rich dark cherry fruit, spice, and firm tannins, requiring time to integrate and soften.
