🏰 The 2024 Jean Paul Droin Chablis Vaillons 1er Cru is a promising white Burgundy (Chardonnay) from a historic domaine with over 400 years of family winemaking tradition. As a very recent vintage, detailed long-term reviews are still emerging, but early assessments from late 2025 and early 2026 are already available. This Chablis 1er Cru is an assemblage of five distinct "climats" (Epinottes, Roncières, Séchet, Chatains, and Beugnons), benefiting from a sunny, sheltered exposure that promotes early maturity. 【A classical Chablis 1er Cru from a historic domaine, offering early maturity and a blend of five distinct climats】.
Tasting notes describe a comparatively strict and correct nose, with a stonier character than expected, leading to a more generous palate with hints of fresh apricot and peach. Aromas of orange zest, pastry, and honeysuckle are also noted, alongside classic white flowers and sea air. It offers a medium to full-bodied palate with a crisp, pure, and open-knit fruit profile. Unusually for young Chablis, it lacks habitual austerity and can be enjoyed in its earliest years. With age, it is expected to develop tertiary aromas of menthol and oyster shell.
🍴 This versatile Chablis pairs wonderfully with a wide array of dishes. It is an excellent match for all types of sea produce, regional cheeses, shellfish, crab, and lobster. Further suggestions include salads, soft cheeses, white fish, white meats, sushi, oily fish, green vegetable risotto, delicate fish, fresh seafood, and marinated chicken in preserved lemon.
🥂 This youthful Chablis 1er Cru is suitable for immediate enjoyment, particularly for its vibrant primary fruit. However, giving it about 18 months in the bottle is recommended to allow its aromatics to fully open up and for better depth. It's perfect for aperitifs, seafood dinners, or any occasion where a crisp, mineral-driven white wine is desired. Serve chilled, around 10-12°C.
