【From a rising star in Champagne, Guillaume Sergent's 1er Cru Chemin des Chappes Extra Brut is a pure, focused, and brilliantly balanced Blanc de Noirs, showcasing the unique terroir of Vrigny.】 Guillaume Sergent, whose family has a two-century vine-growing legacy, cultivates his 1.5 hectares of 1er cru vines organically and biodynamically, applying for organic certification in 2019. This Champagne is a 50/50 blend of Pinot Noir and Pinot Meunier from two distinct parcels, Les Grands Chemins and Les Chappes, vinified in oak barrels with minimal dosage. Expect a golden color with a fragrant nose of yellow raspberries, strawberries, orange zest, and hints of ginger and saffron. On the palate, it's rich, full-bodied, with juicy red apple and citrus notes, balanced acidity, and a gracefully balanced, intensely site-expressive floral fruitiness.
🍴 Chinese Cantonese food pairing various types of suggestion east or west corresponding to wine cost IN ENGLISH
This vibrant Champagne is excellent with Cantonese dim sum, especially fried spring rolls or shrimp dumplings, where its acidity cuts through richness. For Western pairings, consider fresh oysters, pan-seared scallops, fried chicken, or soft, creamy cheeses like Brie. It's also a fantastic aperitif.
