🏰 The 2003 vintage in Burgundy was marked by extreme heat and drought, leading to an early harvest. Initially, many wines were perceived as heavy and baked, but this Nicolas Rossignol Volnay Cailleret has shown remarkable evolution, developing into a more attractive and complex wine with significant aging potential, defying earlier predictions. Expect a deep ruby hue with notes of red fruit, stone, earth, and delicate floral hints. The palate offers excellent mid-palate density with rich, powerful flavours, supported by firm yet buffered tannins, leading to a long, serious finish. Some tasters have noted plum, milk chocolate, and spice, with ripe red cherries and raspberries, and an elegant tannic structure.
🍴 This elegant red Burgundy pairs beautifully with classic French cuisine such as coq au vin, roasted duck, or delicate game birds. It also complements mushroom-based dishes and medium-aged, earthy cheeses.
🥂 Ideal for a contemplative evening, a special anniversary dinner, or a gathering of Burgundy enthusiasts who appreciate the nuanced evolution of mature wines. This 2003 Burgundy has defied initial expectations and developed beautifully, showing far longer aging potential than first thought. Expect a more mature, complex profile with tertiary notes emerging. When opening, be gentle with the cork, as older corks can be fragile. Decanting is recommended for an hour or two to allow the wine to breathe and shed any sediment, revealing its full aromatic complexity. Serve at cellar temperature (around 16°C).
BACKGROUND
Domaine Nicolas Rossignol is a wine producer headquartered in the village of Volnay in the Côte de Beaune sub-region of Burgundy. The estate covers 17 hectares (42 acres) of vineyards, mainly planted with Pinot Noir. The estate’s founder, Nicolas Rossignol, is a descendant of Volnay winegrowers and first learned his craft at the family winery Domaine Rossignol-Jeanniard. He then established his own winery in 1997, purchasing three hectares (seven acres) of vines in various villages.
