FEATURES
🏰 The 1994 Bordeaux vintage was considered average, an improvement over the preceding three poor vintages, but marked by heavy September rains that led to some under-ripeness and a lack of charm in many wines. However, careful grape selection was crucial, and the vintage ultimately ended moderately to good, with some wines being perfectly pleasant today. Amiral de Beychevelle 1994, the second wine of Château Beychevelle, is a red Bordeaux blend showcasing ripe fruit and subtle herbal notes, with tannins reflecting the region's hallmark structure. It displays a splendid ruby color, with an aromatic bouquet of blackcurrant, black cherry, and blackberry notes, mingled with scents of tobacco, graphite, and pepper. The palate offers a supple and delicious attack, with a dense body supported by beautiful tension, revealing fine, elegant, and perfectly polished tannins. Jammy fruit aromas unfold, combining with tertiary notes of cigar box, leading to a very persistent finish with beautiful freshness. Some notes also mention an expressive nose of cedar, barnyard, and earth, with soft tannins and an elegant, midweight body. 【Elegant second wine with good aging potential】 🍴 This mature Bordeaux red pairs wonderfully with classic meat dishes. Consider grilled ribeye, roasted lamb, duck confit, or hearty beef stew [cite: 9, 16, 20 in previous search]. Its elegant structure also makes it a good match for fine cuts of beef or game. For a more casual pairing, aged hard cheeses would be suitable. 🥂 This wine is well-suited for a refined dinner, a special gathering with friends, or as a thoughtful gift for a Bordeaux lover. Its evolved character makes it a wine to be savored and appreciated for its maturity. Serving Advice for this Aged Wine: Wines of this age can be fragile. Stand the bottle upright for several days before serving to allow any sediment to settle. Handle with extreme care, as old corks can be delicate. Consider using an Ah-So opener or a Durand to minimize cork breakage. Decanting is recommended for 30-60 minutes to allow the wine to breathe and shed any sediment, but be mindful not to over-decant, as very old wines can fade quickly. Serve at cellar temperature, around 16-18°C (60-64°F).
BACKGROUND
Chateau Beychevelle is a wine estate in the Saint-Julien appellation of the Medoc. The Cabernet Sauvignon-dominant wine is known for its supple power and smooth, rich texture, and better vintages have great aging ability. In the Bordeaux Classification of 1855 it was ranked a fourth growth. The 250-hectare (620-acre) estate is situated in the extreme southeast of the appellation, just to the south of Branaire-Ducru. The Beychevelle vineyard covers 90ha (222 acres) of deep Garonne gravel, with 62 percent planted to Cabernet Sauvignon, which is dominant in the wine itself. The remaining vineyard has 31 percent Merlot, 5 percent Cabernet Franc and 2 percent Petit Verdot.
