🏰 【Chateau Haut-Bages Averous, the esteemed second wine of Chateau Lynch-Bages, offers a glimpse into Pauillac's renowned terroir.】 The 1993 vintage, while from a challenging year in Bordeaux, can still offer a delightful experience for those who appreciate mature wines. Expect a profile of evolved red and black fruits, subtle cedar, and earthy notes, with a leaner structure typical of the vintage. This wine, designed for earlier enjoyment than its Grand Vin sibling, has gracefully aged, showcasing tertiary aromas and a softened tannic frame.
🍴 This mature Bordeaux is a classic match for roasted lamb, beef tenderloin, game dishes, or a selection of aged hard cheeses.
🥂 Ideal for a relaxed dinner with fellow wine enthusiasts, or as an intriguing exploration into the nuances of a well-aged second wine from a less-heralded vintage.
For a wine of this age, expect some sediment. Stand the bottle upright for at least 24 hours before serving. Carefully remove the cork, checking its condition, as older corks can be fragile. Decanting is highly recommended to separate any sediment and allow the wine to breathe, which can help soften any remaining tannins and reveal its full aromatic complexity. Serve at cellar temperature, around 16-18°C (60-64°F).
BACKGROUND
