Vincent Dauvissat, Chablis Les Preuses Grand Cru, 2012
🏰news | features + short tasting note IN ENGLISH
The 2012 Vincent Dauvissat Chablis Les Preuses Grand Cru is a 【magnificent, spellbinding effort】, showcasing exceptional balance and stunning complexity. Despite a challenging growing season with unusual weather, including a cool, damp spring and variable summer, the wine achieved a pinnacle of regional expression. It offers intensely mineral, silex-infused notes melding into precise, crystalline fruit. Expect a nose of iodine, oyster shells, sea spray, crushed fruit, and white flowers, with a palate of saline minerality, lemon, and a long, chalky finish. This wine is known for its density without heaviness, and a wonderful sense of refinement.

This Grand Cru Chablis is a perfect match for premium seafood. Think pan-seared scallops, grilled lobster, fresh oysters, or steamed crab. For a more elaborate dish, consider a delicate sole meunière or a rich fish like turbot. It also pairs well with mild and soft cheeses.
