【A superb and authoritative young Chablis from the king of La Forest, Vincent Dauvissat!】 Vincent Dauvissat is widely regarded as one of Chablis' finest domaines, known for crafting deep, complex, and long-lived wines that embody the region's characteristic steely bite with exceptional purity. The 2023 Chablis 1er Cru La Forest is already hailed as superb and one of the year's most authoritative wines, showcasing the vibrant, primary characteristics of a very young Chablis. It opens with marine-inflected aromas of oyster shell, lemon zest, dried white flowers, and iodine. The palate is medium-bodied and tensile, laden with electric acidity, abundant chalky extract, and a searingly saline finish.

This vibrant Chablis is fantastic with fresh seafood like steamed prawns, raw oysters, or delicate sashimi. Its acidity also cuts through richer Cantonese dishes such as steamed chicken with mushrooms or even dim sum like siu mai.

BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
