🏰 The 1987 vintage in the Northern Rhône, while not considered a blockbuster year, could still yield charming and expressive wines from dedicated producers like Dervieux Thaize. Côte Rôtie wines from this era, particularly those from a single vineyard like 'La Viaillere', would likely showcase the elegance and savoury characteristics of aged Syrah. Expect a wine that has evolved gracefully, offering tertiary aromas and a softer palate than its youth. While specific tasting notes for Dervieux Thaize Côte Rôtie La Viaillere 1987 are scarce, aged Côte Rôtie typically presents notes of leather, tobacco, forest floor, dried fruits, and subtle spice, with a lingering, complex finish. 【Elegance and savoury characteristics of aged Syrah】
🍴 This mature Côte Rôtie would be superb with roasted game birds, lamb tagine, beef bourguignon, or aged hard cheeses.
🥂 An excellent choice for a milestone anniversary, a sophisticated dinner party with connoisseurs, or a quiet evening appreciating a well-aged wine.
Serving Advice: For a wine of this age, the cork may be delicate. Use a two-pronged Ah-So opener or a Durand to minimise the risk of breakage. Stand the bottle upright for at least 24-48 hours to allow any sediment to settle. Decant gently for 30-60 minutes just before serving to separate the wine from its sediment and allow it to breathe, but be mindful not to over-decant, as very old wines can fade quickly. Serve at cellar temperature, around 16-18°C (60-64°F).
