FEATURES
Comando G, founded in 2008 by Daniel Gómez Landi and Fernando García, is a Spanish wine producer renowned for showcasing the elegance and finesse of high-altitude, old-vine Garnacha (Grenache) from the Sierra de Gredos mountains. However, their 'Camino del Pilar' is a unique white wine made from the Albillo Real grape variety, with the 2020 vintage being particularly notable for its flor-aging process, akin to Jura wines. This wine is described as soulful, ethereal, and nuanced, offering notes of dried herbs, thyme, grapefruit, mineral, wild berries, and white pepper. It presents a tangy and chalky palate with a medium body, great precision, and purity, leading to a long, mineral finish. The winemaking involves fermentation in stainless steel, followed by aging in Sherry tonneau and Manzanilla casks where a thin veil of flor develops, and then further aging in demijohns. 【Comando G aims to make wines that reflect the place, landscape, and identity of their vineyards, classifying them according to the Burgundy system of Village, Premier Cru, and Grand Cru.】
Food pairing suggestions: Given its unique oxidative style and nutty, saline notes, this Albillo Real would pair wonderfully with rich seafood dishes, such as grilled oily fish like salmon or trout. It could also complement Spanish cheeses like Manchego or Petit Basque, charcuterie, or even poultry and pork dishes with a hint of spice. Its complexity also makes it suitable for contemplative sipping without food.
Event suggestions: An excellent choice for a wine tasting focused on unique white wines, a sophisticated dinner with friends, or as a conversation starter for those who appreciate Jura-style or oxidative whites. It's ready to drink now but can also be held for a few more years.
