The 2020 Zarate El Palomar is a remarkable Albariño from Rías Baixas, Spain, hailing from a historic winery that has been crafting these wines since the early 18th century. This particular expression is a single-variety Albariño, sourced from 150-year-old ungrafted vines rooted in shallow granite soil, which imparts a distinctive mineral character to the wine. Production is exceptionally limited, with only around 2,500 bottles made. The winery adheres to environmentally friendly practices, including manual harvesting and grape selection, and avoids herbicides. The wine is fermented in 2,200-litre French oak foudres and aged on its lees for nine months.
