The 2007 Billecart-Salmon Cuvée Elisabeth Salmon Rosé is a magnificent Champagne, crafted from a 50/50 blend of Pinot Noir and Chardonnay. A small percentage (8-9%) of Pinot Noir red wine, sourced from very old vines in Valofroy, contributes to its beautiful salmon pink hue and structure. The 2007 vintage is noted for being full-bodied, broad, and vinous, with an enveloping attack and a bright, underlying spice of acidity. The largely blocked malolactic fermentation further contributes to its textural and powerful character.
This Champagne displays a clear, bright salmon pink color with very tiny, persistent bubbles. The nose is expressive, opening with notes of cherries, oranges, lemons, and minerality, evolving to reveal red berries, orange rind, dried flowers, warm brioche, and spices. On the palate, it is refreshing and delicious, showcasing cherries and lemon rind with underlying minerality, a long finish, and great acidity.
