For dry white wines from Pessac-Léognan and Graves, however, 2007 proved to be surprisingly good, with some critics even calling them stunning and excellent. Tasting notes for this wine reveal a ripe nose with hints of lime, gooseberry, and a touch of cut grass. On the palate, it's ripe and full of grapefruit, lime, and gooseberry, though some found it to lack a bit of tension towards the finish. Other reviews highlight mature and intense flavours, a fresh and energetic palate, crisp acidity, and notes of cream and vegetables, culminating in excellent length. In its youth, Carbonnieux whites are known for their freshness, purity, and aromatic intensity, showcasing both fruity and floral notes, which evolve into dried and candied fruit characteristics with age. Given its 17 years of age, this 2007 vintage is now at full maturity. While some bottles might show signs of fading fruit or oxidation, well-preserved examples can still be marvellous. It's advisable to consume any remaining bottles in the next few years. When serving, be mindful of older corks, which can be fragile; a Durand or Ah-So opener is recommended. A short decanting period (30-60 minutes) might help it open up, but exercise caution with very old whites as excessive air can sometimes diminish delicate aromas. BACKGROUND
Chateau Carbonnieux is a wine producer based in the Pessac Leognan region of Bordeaux, where it produces red and white wines across a variety of tiers and the estate was founded in the 13th Century. The typical Bordeaux varieties of Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, Sauvignon Blanc and Semillon are planted in the vineyards. The vines are on average 30 years old, and are planted on soils rich in gravel, clay, sand and limestone that are naturally well draining. Chateau Carbonnieux strives to practice organic and sustainable farming throughout the vineyards.
