FEATURES
Nicolas Joly is widely recognized as a pioneer in biodynamic winemaking, and his Savennières Clos de la Bergerie is a testament to his philosophy. The 2024 vintage is a new release, crafted from Chenin Blanc grapes grown on a seven-hectare parcel with east-facing slopes and schist soils, where the vines are around thirty years old. The winemaking process is characterized by minimal intervention, with biodynamically grown fruit vinified without chaptalization, temperature control, or additional yeast. Aging occurs in seasoned oak, with occasional rackings and bâtonnage, and the wine remains unfiltered.
This Chenin Blanc exhibits a tonic character with fine bitter notes, a vibrant texture, and ripe fruit flavors balanced by freshness. It's described as salty and sweet, reminiscent of sea salt gently sprinkled on ripe mangoes and sweet peaches, showcasing a poised yet full and powerful profile. Expect ripe, green-and-golden orchard aromas, peach stone fruit, dried white blossom, and a distinct mineral, chalky character. Tasting notes often include honey, minerals, stone, apple, pear, apricot, orange, citrus, lemon, almond, nutty, toast, and subtle oaky nuances.
Food Pairing: This versatile white wine is an excellent match for rich seafood dishes, creamy cheeses, and poultry. Consider roasted chicken or turkey, pan-seared scallops, or a creamy mushroom risotto. For Asian cuisine, it would complement steamed fish with ginger and spring onion, or a delicate chicken and coconut curry.
Event Suggestions: Given its complexity and potential for aging, this wine is ideal for a thoughtful dinner party, a wine tasting focused on biodynamic wines, or as a sophisticated gift for a wine enthusiast. It is recommended to age this wine for at least five years and to open the bottle the day before drinking, decanting for optimal enjoyment. 【Pioneer in biodynamic winemaking】
