The 1991 vintage for red Burgundy, initially overshadowed by the acclaimed 1990, has emerged as a 【 sleeper vintage for red Burgundy 】. Despite early challenges like severe spring frosts and localized hailstorms, the hot and dry summer, extending into September, allowed the red wines to develop into expressions of strength and depth with significant aging potential. Many 1991 red Burgundies have developed beautifully, reaching their peak maturity.
Expect a deep and bright red color. The nose often presents delicate notes of black fruits, plum, cherry, coffee, herbs, and minerals, with some developing hints of undergrowth and earth. On the palate, these wines can be rich and powerful, showcasing good acidity, firm yet softened tannins, and a spicy finish. As a mature red Burgundy, it will also exhibit classic tertiary aromas of underbrush, mushrooms, and leather.
🥂 This mature red Burgundy is perfect for a special dinner, a milestone anniversary celebration (like a 35th anniversary in 2026), or a gathering of discerning wine enthusiasts who appreciate the complexity of aged wines.
Serving Advice: For a wine of this age, be mindful of potentially fragile corks and capsules; a Durand or Ah-So opener is highly recommended. Decanting should be done carefully, just before serving, to separate any sediment and allow the wine to breathe for a short period, perhaps 30 minutes to an hour, depending on its condition. Serve at a cool cellar temperature, around 16-18°C (60-64°F).
🍴 This Savigny-les-Beaune pairs wonderfully with classic red meat dishes, whether grilled or in a rich sauce, and is excellent with roast poultry. It also makes a superb match for carefully roasted duck breast, complementing the delicate red meat with a hint of gaminess.
