It's a co-fermented blend of multiple grape varieties including Riesling, Pinot Gris, Pinot Blanc, Auxerrois, Muscat, Gewurztraminer, and even some Pinot Noir, with varying maceration times on the skins to give it its distinctive orange hue and slightly tannic structure. The 2021 vintage in Germany (and by extension, Alsace, given its proximity and similar climate influences) was challenging, with a cool growing season leading to lighter-bodied wines with lower alcohol, but excellent preservation of aromatic character and acidity. The nose of Symbiose 2021 is a burst of exotic fruits and flowers, with notes of lychee, nectarine, strawberry, and rosehip, complemented by spicy trails of cinnamon and white pepper.
