Brice Allouchery, based in Écueil in the heart of the Montagne de Reims, took over winemaking in 2018 and converted his vineyards to organic farming. His philosophy centers on patience and allowing the terroir to shine through minimal intervention, with fermentations occurring naturally and wines often aged in oak barrels. The '1er Cru Trois Lieux Brut Nature' is a non-vintage (NV) sparkling wine, reflecting a pure and authentic expression of Champagne with no added sugar after disgorgement. Tasting notes often highlight fresh bruised apple, yellow jelly, and pineapple notes on the palate, with a lengthy finish of bruised apple and honeysuckle. Other descriptions include herbal, red fruit, spiced barrel, and curry leaves on the nose, with an opulent and fresh foam that fills the palate, leading to a long savory finish with touches of nutmeg.
