Philippe Pacalet, Vosne Romanee 1er Cru Les Chaumes, 2014
The 2014 Philippe Pacalet Vosne-Romanée 1er Cru Les Chaumes is a true beauty, offering a pure and harmonious expression of its terroir. Philippe Pacalet, a leading figure in Burgundy's natural wine movement, meticulously oversees every stage of winemaking, from grape selection to aging, adhering to a minimalist and contextualist philosophy. This particular vintage, tasted from cask in March 2015, was noted for its complex layers of red berry fruit, spiced with violets, pepper, and allspice, alongside a playful and intense minerality. By August 2016, the wine's bouquet had developed gorgeous red fruit notes—sweet and deep with a lovely depth and a fine Vosne spiciness. On the palate, it is rich, very juicy, and boasts a relatively pronounced fruity mid-palate for a Pacalet 1er Cru, with a nice concentration. It was described as a "magnificent" wine, needing time to unfold its full potential.
🍴 Food Pairing: This Burgundy Côte de Nuits Red wine is an excellent match for beef, veal, poultry, and game (such as deer or venison).
